I just bought a 2003 White Corvette Convertible with 8,800 miles. The delaer sold it to me as a 50th Annivesary Edition model very rare since it was produced in White. In doing a little research it looks like all 2003 50th Annivesary Edition Corvettes only came in one color RED. How do I prove I do or do not have a rare 2003 50th Annivesary Corvette?

First off, thanks for visiting our site and for posting on our boards.
In response to your question, all Corvettes built in 2003 received special "50th Anniversary" emblems, but all of the "50th Anniversary Edition" Corvettes (RPO 1SC) were painted a special "50th Anniversary Red" (which is the actual name of the paint color.)
It's possible that your car was re-painted, and I suppose it is possible that someone could have requested a color change when ordering the 50th Anniversary Package, but there is no record of it in the literature we have available to us.
My guess is that whoever sold you the car assumed that it was a 50th Anniversary Collector's Edition because it had the "50th Anniversary" badging, when in reality all 2003 Corvettes came equipped that way.
