Is the clutch able to be adjusted? It seems that I have to allow the clutch pedal travel out pretty far for the clutch to engage for each shifting of gears. Any advice appreciated.

The C5 has a hydraulic clutch and is self adjusting. Check your clutch master cylinder and make sure that it is filled.
High engagement point usually means that there is clutch wear.
